Ingredients

  • 1 1/4 pounds ripe tomatoes about 3 large, at room temperature
  • 8 ounces fresh mozzarella balls packed in water drained (two 4 ounce balls)
  • 20 fresh basil leaves about 1/2 cup loosely packed, divided
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic glaze
  • 1/4 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper

Equipment

  • Serrated knife, 8 inch
  • Thin-bladed slicing knife
  • Half sheet pan, 13x18 inch, lined with paper towels
  • Large oval platter, 12 inch

Method

  1. Set the mozzarella on a paper towel lined plate and pat the tops dry. Rest for 10 minutes, until the towels stop soaking up moisture.
  2. Cut the stem end off each tomato with the serrated knife. Slice crosswise into 1/4 inch rounds, about 14 slices that hold together when lifted.
  3. Lay the tomato slices in one layer on the lined sheet pan and sprinkle with the fine sea salt. Rest for 10 minutes, until beads of juice show on top and the towel looks damp.
  4. Slice each mozzarella ball into 1/4 inch rounds with the thin knife, wiping the blade after every cut. Aim for about 14 slices with smooth edges.
  5. Blot the tomato slices lightly with a fresh paper towel. Arrange tomatoes and mozzarella on the platter in overlapping rows, each slice overlapping the next by about one third, and tuck half the basil between the slices.
  6. Spoon the olive oil over the slices and grind the pepper on top, until the oil shines on the tomatoes.
  7. Tear the remaining basil over the platter and drizzle the glaze in thin zigzag lines. Serve within 15 minutes, while the glaze still sits in dark lines on the white cheese.

Notes

Never refrigerate tomatoes before slicing, and let them sit on the counter for at least 30 minutes first.
Dress the platter only at serving time so the glaze and oil stay neat.
Storage: Refrigerate leftovers in an airtight container at 40°F or below for up to 2 days. Do not freeze.
