Ingredients

Chicken
  • 1 1/2 pounds boneless skinless chicken thighs
  • 1 tablespoon olive oil
  • 2 tablespoons fresh lime juice
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1 teaspoon Diamond Crystal kosher salt
  • 1/4 teaspoon black pepper
Cilantro Lime Rice
  • 1 cup long-grain white rice
  • 1 1/2 cups water
  • 1 tablespoon olive oil
  • 1/2 teaspoon Diamond Crystal kosher salt
  • 1/2 cup chopped fresh cilantro
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest
Black Beans
  • 2 cans 15 ounces each low-sodium black beans, drained and rinsed
  • 1/4 cup water
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon chili powder
Pico and Toppings
  • 4 Roma tomatoes about 12 ounces, diced
  • 1/2 cup finely diced red onion
  • 1 jalapeño seeded and minced
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon fresh lime juice
  • 1/4 teaspoon Diamond Crystal kosher salt
  • 1 cup frozen corn thawed
  • 2 ripe avocados sliced
  • 4 cups shredded romaine lettuce
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 cup sour cream thinned with 1 tablespoon fresh lime juice

Equipment

  • 12-inch skillet
  • 3-quart saucepan with a tight lid
  • 1-quart saucepan
  • Fine-mesh strainer
  • Instant-read thermometer

Method

  1. Whisk the oil, 2 tablespoons lime juice, and all the chicken spices in a large bowl. Toss in the thighs and marinate 15 minutes, never past 1 hour. The chicken should look evenly coated in a brick red paste.
  2. Combine the rinsed rice, 1 1/2 cups water, 1 tablespoon oil, and 1/2 teaspoon salt in the 3-quart saucepan. Boil on high for 4 minutes, then cover tightly, reduce to low, and cook 18 minutes without lifting the lid. Steam holes should dot the surface.
  3. Stir the tomatoes, onion, jalapeño, 1/4 cup cilantro, 1 tablespoon lime juice, and 1/4 teaspoon salt together. Set it aside. Pink juices should pool at the bottom.
  4. Heat the 12-inch skillet over medium high for 2 minutes. Cook the thighs in a single layer for 6 to 7 minutes, flip, and cook 5 to 6 minutes more, until a thermometer reads 175°F (165°F is the USDA minimum). The crust should be deep mahogany and the juices clear.
  5. Rest the chicken on a cutting board for 5 minutes, then slice across the grain into 1/2 inch strips. The strips should look glossy, not dry.
  6. Wipe out the skillet and heat it on high. Cook the dried corn with no oil for 4 to 5 minutes, stirring once a minute, until golden brown spots and a few dark flecks appear.
  7. Heat the beans, 1/4 cup water, 1/2 teaspoon cumin, and 1/4 teaspoon chili powder in the 1-quart saucepan over medium low for 5 minutes. Mash a few beans against the pan. The liquid should coat the beans like a glaze.
  8. Turn off the heat under the rice and keep it covered for 10 minutes. Fluff, then fold in 1/2 cup cilantro, 2 tablespoons lime juice, and the zest. The grains should look separate and flecked with green.
  9. Stir the sour cream and 1 tablespoon lime juice until smooth. It should drizzle off the spoon in a thick ribbon.
  10. Divide the rice among 4 bowls. Add the beans, chicken, corn, drained pico, romaine, avocado, and cheese in sections, then drizzle with crema and serve at once. Each bowl should show five or six colors.

Notes

Storage: Refrigerate up to 4 days, or freeze the chicken, rice, and beans up to 3 months. Keep pico, avocado, lettuce, and crema separate.
Chicken breast works: halve 1 1/2 pounds horizontally and sear 4 to 5 minutes per side to 165°F.
Diamond Crystal is lighter than Morton by volume. With Morton, cut the salt by about a third.
