- Beat butter and sugar on medium for 2 minutes, scraping once, until light and fluffy.
- Beat in egg and 1 teaspoon alcohol-free vanilla for 30 seconds until creamy.
- Add dry ingredients and mix on low for 20 to 30 seconds until no dry flour remains and dough is soft.
- Press dough evenly into an 11-inch circle on the lined 12-inch solid pan, keeping a border and level surface.
- Bake at 350°F on the middle rack for 20 minutes, until rim is pale gold and center is matte and set.
- Cool in the pan on a wire rack for 40 minutes, until the center feels cool.
- Beat cream cheese and powdered sugar for 1 minute; add lemon juice and remaining 1 teaspoon alcohol-free vanilla, then beat 30 seconds until frosting holds soft ridges.
- Spread frosting over cooled cookie with a narrow bare rim; place strawberries, kiwis, blueberries, and raspberries in one distinct layer.
- Refrigerate 30 minutes, until topping firms slightly; cut into 12 intact wedges with a clean knife.
