Fresh Mojito Mocktail with Mint and Lime in 7 Minutes

A refreshing no-cook drink made with fresh spearmint, lime juice, cane sugar, and chilled club soda over crushed ice. Ready in 7 minutes with no syrup needed.

Ingredients
  

  • 20 fresh spearmint leaves plus 2 small sprigs for garnish
  • 4 tablespoons fresh lime juice about 2 medium limes
  • 4 teaspoons superfine cane sugar
  • 1½ cups chilled club soda
  • 2 cups crushed ice
  • 2 lime wheels or wedges for garnish

Equipment

  • Two 12–14 oz highball glasses
  • Muddler
  • Citrus juicer

Method
 

  1. Divide 10 mint leaves and 2 teaspoons sugar into each glass. Press 4 to 6 times with a muddler until the mint smells strong — do not grind the leaves into paste.
  2. Pour 2 tablespoons fresh lime juice into each glass and stir for about 10 seconds until the sugar dissolves.
  3. Fill each glass almost to the top with about 1 cup crushed ice, pressing it down lightly.
  4. Slowly pour ¾ cup chilled club soda down the inside of each glass.
  5. Slide a long spoon to the bottom and lift the lime-mint base upward once or twice — do not stir vigorously.
  6. Clap a mint sprig between your palms to release its aroma, then garnish each glass with the sprig and a lime wheel. Serve immediately.

Notes

  • Make-ahead: Mix lime juice and sugar up to 4 hours ahead and refrigerate. Add fresh mint, crushed ice, and club soda only when ready to serve.
  • Storage: Store the lime-sugar base in an airtight container at 40°F or below for up to 24 hours. Do not freeze the finished drink — carbonation disappears and mint darkens.
  • Sugar substitute: Replace 4 teaspoons cane sugar with 2 tablespoons plain simple syrup. It dissolves instantly in cold liquid.
