Fried Rice with Golden Egg and Crisp Vegetables

A vegetable and egg fried rice made with chilled long-grain white rice, cooked in two batches for loose, separate grains. Seasoned with soy sauce, ginger, garlic, and toasted sesame oil.

Ingredients
  

Rice, eggs, and vegetables
  • 4 cups cooked chilled long-grain white rice (about 600 grams), grains separated
  • 3 large eggs beaten
  • 1 medium carrot finely diced (about 100 grams)
  • 1/2 medium yellow onion diced (about 100 grams)
  • 1/2 cup frozen peas thawed and patted dry (about 80 grams)
  • 4 scallions sliced, whites and greens separated
Oil and seasoning
  • 3 tablespoons avocado or canola oil divided
  • 2 garlic cloves minced
  • 2 teaspoons finely grated fresh ginger
  • 2 tablespoons reduced-sodium soy sauce divided (1 tablespoon per batch)
  • 1/4 teaspoon ground white pepper divided
  • 1 teaspoon toasted sesame oil divided

Method
 

  1. Break cold rice into loose grains with clean fingers or a fork. Beat eggs until fully blended. Dice carrot and onion into quarter-inch pieces, thaw and pat peas dry, and measure all oils, sauce, and aromatics before heating the pan.
  2. Heat 1 teaspoon oil in a 12-inch skillet over medium heat. Cook beaten eggs for 1 to 2 minutes, stirring, until just fully set. Transfer to a heatproof bowl.
  3. Add 2 teaspoons oil to the skillet over medium-high heat. Cook onion and carrot for 3 to 4 minutes until the carrot loses its raw crunch. Add peas, scallion whites, garlic, and ginger and cook for 30 to 60 seconds. Transfer everything to the bowl with the eggs.
  4. Add 1 tablespoon oil and 2 cups rice to the skillet over medium-high heat. Spread across the pan and cook for 3 to 4 minutes, lifting and turning every 30 to 45 seconds until the grains are separate and hot.
  5. Add 1 tablespoon soy sauce, half the white pepper, and half the egg-vegetable mixture. Toss for 1 to 2 minutes until the rice reaches 165°F throughout. Turn off the heat, fold in 1/2 teaspoon sesame oil and half the scallion greens, and transfer to a serving platter.
  6. Return the skillet to medium-high heat and repeat steps 4 and 5 with the remaining rice, oil, soy sauce, pepper, egg-vegetable mixture, sesame oil, and scallion greens. Serve promptly.

Notes

  • Store leftovers in covered shallow containers in the refrigerator. Use within 3 to 4 days of the original rice cooking date. To reheat, add 1 tablespoon water per serving and microwave in 30-second intervals until it reaches 165°F throughout.
  • For best texture, cook the plain rice a day ahead, refrigerate it promptly in shallow containers, and fry it cold. Do not use rice that was left out overnight.
  • For a gluten-free version, replace soy sauce with an alcohol-free tamari labeled gluten-free, using the same measured amount.
