Ingredients

For the Pasta
  • 1 pound 16 ounces rotini pasta, such as Barilla
  • 4 quarts water
  • 2 tablespoons Diamond Crystal kosher salt for the pasta water
For the Salad
  • 2 cups cherry tomatoes halved
  • 1 medium English cucumber about 10 ounces, quartered lengthwise and sliced 1/4 inch thick
  • 1 large red bell pepper about 6 ounces, diced into 1/2 inch pieces
  • 1/2 small red onion about 2 ounces, thinly sliced
  • 3 ounces about 3/4 cup sliced black olives, drained
  • 4 ounces provolone cheese cut into 1/2 inch cubes
  • 6 ounces mozzarella pearls drained and patted dry
  • 1/3 cup grated Parmesan cheese about 1 ounce
  • 1/2 cup loosely packed fresh basil leaves torn
For the Dressing
  • 1/2 cup extra virgin olive oil
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon honey
  • 2 garlic cloves finely minced
  • 1 1/2 teaspoons dried oregano
  • 3/4 teaspoon Diamond Crystal kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes

Equipment

  • 6-quart pot
  • Large colander
  • 5-quart mixing bowl
  • pint mason jar with lid
  • 3 quart airtight glass container

Method

  1. Fill the 6 quart pot with 4 quarts of water, cover it, and set it on high heat so it boils while you chop.
  2. Halve the tomatoes, slice the cucumber, dice the pepper, and thinly slice the onion. Soak the onion in cold water for 5 minutes, then drain. Cube the provolone and pat the mozzarella pearls dry. Measure the dressing ingredients into the jar, tear the basil, and set the colander in the sink.
  3. Stir the 2 tablespoons of salt into the pot and wait for a full rolling boil, about 10 minutes after you started prepping. Large bubbles should break across the whole surface.
  4. Add the rotini, stir right away, and cook for 1 minute less than the package says, usually 8 to 9 minutes. A bitten spiral should feel tender outside with a slightly firm center.
  5. Drain the pasta and rinse it under cold running water for 30 seconds. The pasta should feel cool, with no steam rising.
  6. Seal the jar and shake the dressing for 30 seconds. It should look thick and cloudy, with no clear layer of oil on top.
  7. Shake the colander for 10 seconds, move the pasta to the mixing bowl, and pour in all but 3 tablespoons of the dressing. Toss for 1 minute until every spiral looks glossy.
  8. Add the tomatoes, cucumber, pepper, onion, olives, provolone, and mozzarella pearls. Scoop from the bottom as you fold. After about 15 turns, the pearls should be whole and the colors evenly spread.
  9. Cover the bowl and refrigerate for at least 1 hour and up to 24 hours. The pasta should look slightly darker where it absorbed dressing.
  10. Right before serving, stir in the basil, Parmesan, and the reserved 3 tablespoons of dressing. Taste a spiral with a piece of cheese and add a pinch of salt if needed. The salad should look glossy, with no dry patches.

Notes

Cook the pasta 1 minute short of the package time so it stays firm after chilling.
Taste the finished salad cold, and add a pinch of kosher salt or a squeeze of lemon if it seems flat.
Storage: Refrigerate in an airtight container for 3 to 4 days. Freezing is not recommended.
