Method
- Preheat the oven to 400°F with the rack in the center. Line a half sheet pan with parchment paper.
- Stir the panko and milk together in a large bowl and let them sit for 5 minutes, until the mixture looks like thick, wet oatmeal with no dry crumbs.
- Add the egg, grated onion, garlic, parsley, tomato paste, 1 tablespoon of the olive oil, salt, oregano, paprika, and pepper to the panade. Stir for about 30 seconds until the paste is pale orange with no red streaks.
- Add the cold ground turkey and mix by hand for 30 to 40 seconds, just until no streaks of paste remain. The mixture should look sticky and a little wet.
- With wet hands, roll about 3 tablespoons of the mixture into a golf ball sized ball. Place each ball on the pan 1 inch apart until you have 20 smooth meatballs with no cracks.
- Refrigerate the pan for 15 minutes, until the balls feel firm and dry to a light touch.
- Brush the tops with the remaining 1 tablespoon of olive oil until they look lightly glossy.
- Bake in the center of the oven for 18 to 22 minutes without flipping, until the tops are deep golden brown and a thermometer reads 165°F in the center.
- Rest the meatballs on the pan for 5 minutes, until the bottoms lift off the parchment cleanly. Serve warm.
Notes
