Roasted Salmon Poke Bowl with Ginger-Lime Sesame Sauce

Ingredients
  

Rice
  • 250 g 1¼ cups short-grain white rice
  • 360 ml 1½ cups water
  • 1½ tablespoons rice vinegar
  • 2 teaspoons granulated sugar
  • ¼ teaspoon fine salt
Salmon
  • 600 g skinless salmon fillet cut into 1-inch cubes
  • ½ teaspoon fine salt
Ginger-Lime Sesame Sauce
  • 3 tablespoons low-sodium soy sauce or gluten-free tamari
  • 1 tablespoon toasted sesame oil
  • 2 tablespoons fresh lime juice
  • 2 teaspoons honey
  • 2 teaspoons fresh ginger finely grated
  • 1 small garlic clove finely grated
Toppings
  • 150 g 1 cup shelled edamame, cooked and cooled
  • 250 g English cucumber cut into half-moons, patted dry
  • 2 medium carrots 140 g, cut into matchsticks
  • 4 radishes thinly sliced
  • 1 large avocado diced
  • 4 green onions thinly sliced
  • 2 tablespoons sesame seeds toasted
  • 1 nori sheet cut into strips (optional)

Method
 

  1. Rinse the rice until the water runs clear, then drain for 5 minutes. Combine with water in a saucepan, bring to a gentle boil, cover, reduce heat to low, and cook for 15 minutes. Remove from heat and rest, covered, for 10 minutes. Do not lift the lid during cooking or resting.
  2. Stir rice vinegar, sugar, and ¼ teaspoon salt until dissolved. Fold through the warm rice with a cutting motion, then spread across a wide plate for 10 minutes until warm but not steaming.
  3. Heat the oven to 425°F (220°C) and line a rimmed sheet pan with parchment. Whisk all sauce ingredients together. Transfer 3 tablespoons to a separate covered cup and set aside as the finishing sauce.
  4. Pat the salmon cubes dry and season with the remaining ½ teaspoon salt. Add to the remaining sauce, fold gently to coat, and arrange in a single layer on the prepared pan. Roast for 8–12 minutes until the center of a thick cube reaches 145°F (63°C) and the flesh is opaque. Start checking at 8 minutes.
  5. While the salmon roasts, arrange edamame, cucumber, carrots, radishes, and green onions near the bowls. Dice the avocado just before assembly.
  6. Divide warm rice among four bowls. Place salmon on one side, then arrange the vegetables and avocado in separate groups. Spoon the reserved finishing sauce over the fish and rice, then scatter sesame seeds, green onion, and optional nori on top. Serve immediately.

Notes

  • Store rice, salmon, sauce, and vegetables in separate airtight containers in the refrigerator for up to 3 days. Cut avocado the day it is served.
  • Make ahead: Sauce and sliced sturdy vegetables can be prepared one day ahead. Cook rice and salmon up to one day ahead and assemble only portions being served.
  • Reheat salmon and rice separately to 165°F (74°C) before adding chilled toppings and fresh avocado.
