Thick Acai Bowl with Banana, Berries, and Crunchy Granola

Ingredients
  

Base
  • 2 packets 100 g each unsweetened frozen acai puree, broken into pieces
  • 1 medium banana sliced and frozen
  • 1 cup frozen blueberries
  • ¼ cup unsweetened almond milk
Toppings
  • ½ banana sliced fresh
  • ½ cup strawberries sliced and dried
  • ¼ cup fresh blueberries
  • ⅓ cup granola
  • 2 tablespoons unsweetened coconut flakes
  • 2 teaspoons chia seeds

Equipment

  • High-powered blender
  • Blender tamper (if supported by your blender)
  • Flexible spatula

Method
 

  1. Chill two serving bowls in the freezer for about 10 minutes. Run the sealed acai packets under cool water for 10 to 15 seconds, then break the puree into pieces. Wash and thoroughly dry the fresh fruit.
  2. Pour the almond milk into the blender first, then add the frozen banana, frozen blueberries, and acai pieces.
  3. Blend on low, then increase speed as the mixture moves. Stop every 10 to 15 seconds to scrape down the sides or tamp. The base should move in thick folds and hold a ridge when spooned.
  4. If dry pockets remain after scraping twice, add almond milk 1 tablespoon at a time only until the blades circulate. Do not over-add liquid.
  5. Divide the base immediately between the chilled bowls.
  6. Top each bowl with banana, strawberries, blueberries, granola, coconut flakes, and chia seeds. Serve immediately.

Notes

  • Blend and serve immediately for the thickest texture. If making ahead, refrigerate the plain base in an airtight container for up to 24 hours or freeze for up to 1 month; add toppings only at serving.
  • Keep granola and fresh fruit separate from any stored base so the granola stays crisp.
  • If the base turns too thin, blend in a small handful of frozen blueberries or banana slices to thicken it back up.
