Lentil Soup with Caramelized Tomato and Lemon-Parsley Finish

Hearty lentil soup built on caramelized vegetables and tomato paste, simmered with brown or green lentils, cumin, and smoked paprika. Finished with wilted spinach, lemon, and fresh parsley oil.

Ingredients
  

Soup Base
  • 2 tablespoons extra-virgin olive oil
  • 1 large yellow onion 220 g, diced
  • 2 medium carrots 160 g, diced
  • 2 celery ribs 110 g, diced
  • 4 garlic cloves finely chopped
3 tablespoons tomato paste
  • Spices Lentils and Liquid
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried thyme
  • 1½ teaspoons fine salt divided
  • ½ teaspoon ground black pepper
  • 300 g 1½ cups brown or green lentils, sorted and rinsed
  • 1.4 liters 6 cups vegetable broth
  • 240 ml 1 cup water
  • 2 bay leaves
Greens and Lemon-Parsley Finish
  • 90 g 3 packed cups baby spinach
  • 2 tablespoons fresh lemon juice
  • ½ cup fresh parsley chopped, divided
  • 1 teaspoon fresh lemon zest
  • 1 tablespoon extra-virgin olive oil

Method
 

  1. Heat 2 tablespoons olive oil in a heavy pot over medium heat. Add the onion, carrots, celery, and 1 teaspoon salt. Cook for 9 to 11 minutes, stirring occasionally, until the onion is translucent and several edges are golden.
  2. Add the garlic and cook for 30 seconds. Push the vegetables outward, add the tomato paste to the center, and cook for 2 minutes until brick red and lightly sticking. Add the cumin, coriander, smoked paprika, thyme, and black pepper, and stir for 30 seconds until fragrant.
  3. Add the lentils, broth, water, bay leaves, and remaining ½ teaspoon salt. Scrape the bottom of the pot, bring to a boil, then reduce to a gentle simmer. Partially cover and simmer for 28 to 35 minutes, stirring every 10 minutes, until the lentils mash easily but still hold an edge.
  4. Remove the bay leaves. Transfer exactly 2 cups of soup to a blender, vent the lid, and blend until smooth, then return it to the pot. Alternatively, pulse one area with an immersion blender for 10 to 15 seconds.
  5. Stir in the spinach and simmer for 2 minutes until wilted. Add up to ½ cup water if the soup is thicker than desired.
  6. Turn off the heat. Stir in the lemon juice and ¼ cup parsley, then taste and adjust seasoning. Mix the remaining parsley with the lemon zest and 1 tablespoon olive oil and spoon over each serving.

Notes

  • Store in shallow airtight containers in the refrigerator for 3 to 4 days, or freeze for up to 3 months. Reheat fully on the stove or to 165°F in the microwave, then add broth or water ¼ cup at a time to restore consistency.
  • Make ahead: Cook the full soup up to 3 days ahead. Prepare the parsley and lemon-zest finish on the day of serving for the freshest aroma.
  • Use brown or green lentils for this timing. Split red lentils soften much faster, will change the texture, and do not need blending.
